Unleash your inner wine connoisseur and embark on a sensory journey without leaving your seat! Park & Cove is bottling the Witches Falls winery experience and bringing it to Noosa.

Hailing from the Gold Coast Hinterland all the way to Noosa Heads, unearth the best of Queensland’s coastal abundance at Park & Cove’s Witches Falls Wine Dinner on Thursday 3 October. Partnering with the renowned Tamborine Mountain winery, Park & Cove has distilled the idyllic winery experience and decanted it into a four-course menu complete with complementary wine pairings for an indulgent exploration that will ignite the senses.

Peppers Noosa Resort & Villas Director of Food & Beverage Andrew Wilcox has crafted a menu that pushes the boundaries of flavour, inviting thought-provoking combinations elevated by the wine repertoire on the night to surprise, delight, and inspire diners.

Guests will be welcomed with Bellinis, setting the tone for a sophisticated evening. Appetisers of Taro chips with an earthy Turmeric Coyo, Ten Acres Bread and Romesco Butter will prepare the palate for the complex flavours to come.

The starter of Ox-Heart Tomato, fluffy, fine Stracciatella, fresh Zucchini Blossom and local Seasonal Beans with Chilli, Macadamia Pangrattato will follow, to be washed down with a dry and delightful 2024 Provenance Home Estate Pecorino.

Kingfish Crudo enters the menu as the standout entrée, slicing through the sweet taste of the sashimi with the striking zest of Noosa Native Finger Lime, Papaya and Passionfruit. This light dish will be joined by 2023 Wild Ferment Sauvignon Blanc, a texturally complex classic whose citrusy aroma will unlock and elevate the fruits and freshness of the dish.

For the main, Piggy in the Middle Pork Belly will offer an impressive pork cut amplified with flavoursome Parsnip Purée and a rich Mustard Cress Dressing.

A wine as full-bodied as the experience itself, the 2022 Prophecy Syrah holds its own next to the plate, a thrilling drop imbued with sun-drenched cherries, dried spice, and prominent plum notes.

The evening concludes with a decadent dessert course both in your glass and on your plate, with an intense Classic Tawny Port NV complementing Park & Cove’s signature Daintree Chocolate Melting Moment. The velvety, smooth textures of the chocolate marries the fruity blend, leaving a sweet taste on the tongue to finish the evening.

Guests will enjoy chats with Witches Falls Winery’s Katherine Sowter who will guide guests through the wine pairings; Andy Wilcox will share his inspiration behind the dishes and stories of the local producers; and live music with local Maurice Milani will round out what will be an enriching evening.
